You can feel it in the air of the meadows, hear it in the footsteps of the trotters, and see it in the shimmering ponds where moorhens and ducks play, brightening each day.
Within the stone walls of the Lavalle Farm lives a preserved tradition: cattle raising, inherited from past generations.






Utah Beef: exceptional beef, original from the heart of the Cotentin
Just a stone’s throw from the D-Day beaches, the Utah Beach Estate is the home of the Farm Lavalle , where we keep a family tradition of sustainable cattle farming. On these unspoilt lands, over 200 Limousin cows graze freely, feeding on the grass of the natural meadows of the Cotentin and Bessin Marshes Park.

Responsible and passionate livestock farming
We are among the few farmers in France to produce CO₂-neutral beef, according to the “Life Beef Carbon” study, carried out between 2016 and 2019 in collaboration with the Chamber of Agriculture.
Here, the animals live outdoors almost all year round, overlooking the historic site of Utah Beach.
Committed to organic farming, we rear our cattle with care and passion. Each animal is named at birth, and our breeding bulls are rigorously selected in partnership with the Limousin Herd Book, a guarantee of genetic excellence.

Utah Beef: from farm to table
More than just a name, Utah Beef reflects a local, sustainable and transparent approach. This meat embodies the estate’s values: respectful farming practices, recognised quality, and a strong connection to the Normandy region. Distributed through short supply chains, notably in our restaurant Chez Arsène, Utah Beef guarantees tasty meat, reared with respect for animal welfare and the seasons.
The management of the Ferme Lavalle’s pastures, using organic farming methods, provides high-quality, varied grass enriched by the presence of marshes. Grazing from April to December, and sheltered in winter, our Limousin cattle feast on hay harvested in early summer on the farm. It is this grass-rich diet that produces meat naturally rich in omega-3. During the finishing stage, and to achieve marbled beef, we supplement our cows’ diet with a ration of high-quality cereals sourced from local organic farms.
A Certified Organic Farm
Our farm holds Organic Farming certification, carrying the AB and Bio Europe labels, guaranteeing a production method that respects the environment, animal welfare and the health of our guests. We raise our cattle according to organic farming principles: they are fed on grass and hay from our own meadows, along with cereals grown without pesticides or chemical fertilisers, producing flavourful, high-quality beef. Our wheat, grown to the same organic standards, is also used to make the Domaine’s bread, kneaded and baked on site for the enjoyment of our guests. From field to plate, a consistent and committed approach, in the service of authentic, responsible cuisine.
